I love the holiday season, seeing festive decorations, enjoying time with friends and family, it really is the best time of the year! Holiday treats are a big part of the season too, and all those yummy cookies start popping up everywhere! As a mom, I love baking for my kids too, but I want to be mindful of how much sugar they are eating. I’d love to share this recipe for two-ingredient oatmeal cookies that I make. Its naturally sweetened by banana is truly delicious and satisfies that sweet tooth in us all! You will note that as an option, you can add dark chocolate chips or walnuts, or both to the recipe, but neither is necessary. Walnuts are packed with omega 3s and give you a little more of that healthful power to the cookie. I prefer dark chocolate chips versus milk chocolate chips because they are less cariogenic (less likely to cause tooth decay) and have anti-oxidants.
Ingredients
1 large very ripe banana
1 cup quick cook oats
1/3 cup dark chocolate chips (optional)
1/3 cup walnuts (optional)
Preheat the oven to 350 degrees F. Line a cookie sheet with a silicone mat and spray with cooking spray. Mash the banana very well in a large bowl until it turns into a liquid puree. Add the oats (and the chocolate chips or walnuts if using) and make a stiff dough-like mixture. Form 8-10 balls and then slightly flatten each to look a cookie. Arrange each cookie onto the silicone mat and bake for about 13-15 min, or until the edges look brown.
